You don't have to edit any of the 'variables' in the 'SCREEN SETTINGS' menu, just to activate a skin. Here's a full guide, starting in the main menu:
1: In the main menu, open the CONFIG menu
2: In the CONFIG menu, open the 'SCREEN SETTINGS' submenu
3: In the 'SCREEN SETTINGS' submenu, open the 'SKIN SETTING' submenu
4: In the 'SKIN SETTING' submenu, click on the 'SKIN PATH:' entry
5: The file browser appears, so use it to choose your JPG
6: Back in 'SKIN SETTING' you can repeat step 5 until you find a skin you like
7: Click on the 'APPLY NEW SKIN' entry, to activate the skin for real
8: Click on the 'RETURN' entry to go back to 'SCREEN SETTINGS' submenu
9: Click on the 'RETURN' entry to go back to 'CONFIG' menu
10: Click on the 'OK' entry to save your settings and exit to main menu
In all cases above, I use the word 'Click' as an abbreviation to describe moving the menu cursor to an entry and then push the gamepad button used for 'OK' actions in your uLaunchELF setup (either 'X' or 'O', that choice is up to you).
(In these menus that's the closest thing we have to the mouse clicks used for a computer's menus, so I borrow that term for our purposes.)
Edit:
Having said all the above, about how simple it is to add a skin, I must also add that you often will need to edit the text colours too, to avoid text becoming invisible on a background using the same colour... But that naturally depends on the skins you choose.
